Have leftover chicken? If so, this recipe makes a delicious, quick, and easy dinner, or the perfect after school snack for hungry school kids! I started making these for my kids when they were in grade school and they always loved them! What I just started doing, is adding chopped pineapple to the mix for a Hawaiian version … like a mini Hawaiian BBQ chicken pizza. It’s a super simple dish, especially if you have barbecue sauce handy. If not, here’s one for you to try!
BBQ Chicken English Muffins
You can use your favorite packaged sauce, or make your own. Here’s a recipe for the best-ever barbecue sauce handed down from my mom and grandmom!
Use whatever cheese you love best. For me, it’s sharp cheddar with the recipe, but I think that smoked Gouda or pepper jack would also be great. Simply cut up the chicken, mix it with the barbecue sauce, and spread on a toasted English muffin. Top it all with cheese and toss in under the broiler for a few minutes until the cheese is golden-brown and bubbly. For a fun Hawaiian twist, add chopped pineapple to the chicken and sauce. Aw heck, if you’re gonna add pineapple, you might as well add some snipped cilantro!
If you plan to have it for dinner, serve it with coleslaw or salad and potato chips!
BBQ Chicken English Muffins
Ingredients
- 4 whole English Muffins fork split in half
- 3 cup cooked chicken cut into bite-sized pieces or shredded
- 1 1/2 cups barbecue sauce
- 2 cup grated sharp cheddar cheese or your favorite cheese
- For an optional twist mix small pieces of pineapple with the chicken and barbecue sauce.
Instructions
- Preheat broiler to high. Lightly toast English muffins on a baking sheet.
- Mix chicken with barbecue sauce. Spread chicken mixture over the toasted muffin. Sprinkle cheese over the top.
- Broil for a few minutes, or until cheese is bubbly and beginning to brown. Serve hot!
