Avocado Garden Salad

With Radishes, Cucumber, Cherry Tomatoes, Feta, Cilantro, & Caramelized Onions

Some recipes quietly steal the show at the table, and this Avocado Garden Salad is one of them. It’s super easy to make, it’s beautifully colorful, and so delicious, especially if you are an avocado lover! We really are, so we really enjoy making, eating, and serving this salad to family and guests alike.

This isn’t one of those uber “healthy salads” that feels like a chore to eat. It’s healthy all right, but it’s crunchy, creamy, salty, fresh, bright, and wildly satisfying all at the same time.

It starts with crisp cucumbers, peppery radishes, juicy cherry tomatoes, creamy avocado, salty feta, and handfuls of fresh cilantro — all tossed together in a bright, light vinaigrette that tastes like spring in a bowl. The radishes give it a sharp little snap, the cucumbers keep everything cool and crisp, and the avocado softens every bite into creamy perfection. Then we top it all off with caramelized red onions for the final accent!

Be sure to use firm, but ripe avocados, and also multi-colored cherry tomatoes for an extra pop of color

You want to find avocados that are nice and firm, but also ripe. These are best for this salad, so that the avocado doesn’t get mushy. We find that the assorted cherry tomatoes in orange, yellow, and red are really fun in this salad for more color!

Add grilled shrimp or chicken for a dose of protein if you serve this salad as a main dish

Grilled chicken, shrimp, or even garbanzo beans add extra protein to round this salad out as a main meal.

Avocado Garden Salad

This combination of lots of firm, but ripe avocado, cucumbers, tomatoes, radishes, feta and cilantro tossed in a simple vinaigrette is just the ticket for summer salads.
Servings 6 servings
Prep Time 20 minutes

Ingredients

  • 3 large avocados, cut into small cubes or bite-sized pieces
  • 6 radishes, sliced or cut into bite-sized pieces
  • 24 cherry tomatoes, halved
  • 1 large cucumber, cut into 1/2 inch slices, quartered
  • 1 medium red onion, sliced and grilled or sautéed to caramelize
  • 1/4 cup cilantro, minced
  • 1/2 cup feta cheese crumbles
  • 1 tsp. Lemon Pepper Paradise
  • 1/4 cup red wine vinegar
  • 1/3 cup extra-virgin olive oil

Instructions

  • Layer all of the veggies into a salad bowl, starting with cucumber, followed by radishes, cherry tomatoes and ending with avocado. Sprinkle feta cheese and cilantro over the top. Season with lemon pepper and gently toss with olive oil and vinegar. When serving, place a little spoonful of caramelized red onion on top of each serving.
