Chicken thighs are always nice and tender and almost impossible to over cook, which is one reason we love them. But another reason is that they are such a great vehicle for different spices and we especially love coating boneless, skinless chicken thighs with Peppercorn Perfection and grilling them for a quick, easy and delicious entree that complements just about any side dish you might have in mind … rice, potatoes and all sorts of grilled veggies.
You can use the Peppercorn Perfection as a marinade too, by mixing it with olive oil and water, and it can sit all day in the marinade while you’re at work. This spice blend can be used as a rub or marinade mix and that depends upon what you like best! Using it as a rub, gives the chicken a nice crusty of peppercorn blend, but as a marinade the chicken thighs are infused with the spices.
Peppercorn Crusted Chicken Thighs
Ingredients
Peppercorn Perfection Chicken Thighs
- 3 tbsp. Treks & Bites Peppercorn Perfection spice blend
- 8 boneless, skinless chicken thighs
Peppercorn Perfection Marinade
- 2 tbsp. Treks & Bites Peppercorn Perfection spice blend
- 1/4 cup olive oil
- 1/4 cup water
Peppercorn Perfection Dipping Sauce
- 2 tbsp. Treks & Bites Peppercorn Perfection spice blend
- 1/4 cup olive oil
Instructions
- Rub chicken thighs top and bottom with Peppercorn Perfection spice blend about an hour before grilling.
- Preheat grill to medium heat. When ready to cook chicken, grill about 12 minutes per side, or until cooked through with nice browned edges on the meat.
- If you wish to have a dipping sauce, simply blend 1-2 tablespoons of the Peppercorn Perfection with olive oil and drizzle over the top of the grilled chicken.
