Have you ever tried avocado toast with roasted mushrooms? We just love a good avocado toast, and one of our favorite restaurants in Austin serves both a roasted mushroom toast and an avocado toast, so we figured … why not combine both – avocado and roasted mushrooms all on one toast? We did and the result is one of our favorites yet! Of course, we added a little bit of caramelized shallot, slivered radish, cilantro and lime juice. It’s a perfect combination and an amazing breakfast or lunch treat!
This is really colorful and fun dish to make, to serve and especially to eat! If you have a brightly colored plate, all the better, because it really sets off the colors of the avocados, radishes and limes. Feta cheese would be a great addition to this toast and would add a little tangy flavor and some protein, too. We can’t think of too many dishes where feta cheese doesn’t make a great addition!
Avocado Toast with Roasted Mushrooms, Caramelized Shallots, Radishes, and Fresh Limes
Ingredients
- 10 oz. cremini mushrooms (thinly sliced)
- 2 medium shallots (thinly sliced lengthwise)
- 1 tsp. lemon pepper
- 2 tbsp. extra-virgin olive oil (for roasting the mushrooms and shallots)
- 4 radishes (cut into thin julienne strips)
- 2 large avocados (thinly sliced)
- 4 slices sourdough bread (or your favorite toasting bread)
- 2 tbsp. extra-virgin olive oil (for brushing on bread)
- salt & pepper to taste
- 1/4 cup fresh cilantro leaves
- 12 slices radish (garnish)
- 1 lime (garnish)
Instructions
- Preheat oven to 400℉. Toss mushrooms and shallots in olive oil. Season with lemon pepper. Spread out on a baking sheet and roast until beginning to brown. Remove from oven. (You can do this step ahead of time.)
- When mushrooms and shallots are roasted, get ready to assemble the dish. Brush bread with olive oil and toast to desired doneness.
- Arrange avocado slices on toast, add mushrooms, shallots, radishes and cilantro on top of the avocado. Season with salt and pepper. Serve with radish slices and a slice of lime.
