Avocado Toast with Roasted Mushrooms, Caramelized Shallots, Radishes, and Fresh Limes
Roasted mushrooms top this delicious avocado toast, that is then topped with caramelized shallots, radishes and a squeeze of fresh lime juice.

Ingredients
10 oz.cremini mushrooms(thinly sliced)
2mediumshallots(thinly sliced lengthwise)
1tsp. lemon pepper
2tbsp. extra-virgin olive oil(for roasting the mushrooms and shallots)
4radishes(cut into thin julienne strips)
2largeavocados(thinly sliced)
4slicessourdough bread(or your favorite toasting bread)
2tbsp.extra-virgin olive oil(for brushing on bread)
salt & pepper to taste
1/4cupfresh cilantro leaves
12slicesradish(garnish)
1lime(garnish)
Instructions
Preheat oven to 400℉. Toss mushrooms and shallots in olive oil. Season with lemon pepper. Spread out on a baking sheet and roast until beginning to brown. Remove from oven. (You can do this step ahead of time.)
When mushrooms and shallots are roasted, get ready to assemble the dish. Brush bread with olive oil and toast to desired doneness.
Arrange avocado slices on toast, add mushrooms, shallots, radishes and cilantro on top of the avocado. Season with salt and pepper. Serve with radish slices and a slice of lime.
