Avocado Toast with Roasted Mushrooms, Caramelized Shallots, Radishes, and Fresh Limes

Roasted mushrooms top this delicious avocado toast, that is then topped with caramelized shallots, radishes and a squeeze of fresh lime juice.

Ingredients

  • 10 oz. cremini mushrooms (thinly sliced)
  • 2 medium shallots (thinly sliced lengthwise)
  • 1 tsp. lemon pepper
  • 2 tbsp. extra-virgin olive oil (for roasting the mushrooms and shallots)
  • 4 radishes (cut into thin julienne strips)
  • 2 large avocados (thinly sliced)
  • 4 slices sourdough bread (or your favorite toasting bread)
  • 2 tbsp. extra-virgin olive oil (for brushing on bread)
  • salt & pepper to taste
  • 1/4 cup fresh cilantro leaves
  • 12 slices radish (garnish)
  • 1 lime (garnish)

Instructions

  • Preheat oven to 400℉. Toss mushrooms and shallots in olive oil. Season with lemon pepper. Spread out on a baking sheet and roast until beginning to brown. Remove from oven. (You can do this step ahead of time.)
  • When mushrooms and shallots are roasted, get ready to assemble the dish. Brush bread with olive oil and toast to desired doneness.
  • Arrange avocado slices on toast, add mushrooms, shallots, radishes and cilantro on top of the avocado. Season with salt and pepper. Serve with radish slices and a slice of lime.
