Roasted Mushrooms with Gruyere

Like a little taste of Paris in your own kitchen, Roasted Mushrooms with Gruyere is a dish where rustic comfort meets French elegance. This dish can be served as a stand alone vegetarian meal, or as a side dish to complement grilled meats like chicken or fish. It also makes a delicious topping for pasta or even sourdough toasts for a beautiful light meal.

You can make this dish with any mushroom variety you like best, but we normally use cremini because they are easy to find and easy to clean! We do our fair share of cooking with the morels that we find in the mountains of Idaho, but honestly, as delicious as they are, you can never really remove all of the dirt that’s packed into those little pockets of mushroomness!

This recipe calls for quartered or sliced mushrooms and either way they are fabulously delicious, but we usually do them quartered for a side dish, or sliced if using on top of steak or chicken. You can use more or less cheese as you please, and season the mushrooms wiht your favorite seasoning. Ours just happens to be our brand new Treks & Bites Lemon Pepper Paradise blend!

This dish may be the easiest and tastiest dish to complement any assortment of meat of vegetarian meals.

Roasted Mushrooms with Gruyere

Oven roasted mushrooms with Gruyere Cheese makes the perfect side dish to steak or chicken.

Prep Time 20 minutes
Cook Time 20 minutes

Ingredients

  • 1 lb. cremini mushrooms
  • 2 tbsp. extra-virgin olive oil
  • 1 tsp. Lemon Pepper Paradise (or your favorite lemon pepper)
  • 1 tsp. Peppercorn Perfection (or salt and pepper)
  • 6 oz. very thinly sliced Gruyere cheese
  • 4 sprigs parsley (garnish)

Instructions

  • Prepare a baking sheet or casserole dish with cooking spray. Set aside. Preheat oven to 425℉ or the barbecue grill to medium heat.
  • Clean mushrooms and cut into quarters or slices. Season with Lemon Pepper Paradise (or your favorite lemon pepper) and Peppercorn Perfection (or salt and pepper) and toss with olive oil. Spread mushrooms out onto prepared dish.
  • Roast or grill for approximately 15-20 minutes in the oven, or 10 minutes on the grill, until mushrooms, but still juicy. Remove from heat.

  • Blanket the mushrooms with thin slices of Gruyere cheese and return to the oven or the grill for the final 5-10 minutes, or until the cheese is melted, and gooey, but not too browned. Garnish with a sprig of parsley and serve hot!
