Our good friend, who loves to grill steaks, reached out to see if we could concoct a peppercorn blend to replace the discontinued Weber Peppercorn Marinade Mix. He used it all of the time for grilling steaks, until one day, it sadly disappeared from the market. Treks & Bites Peppercorn Perfection is our proprietary blend of pepper and spices, and we love it on everything from steak to chicken and even roasted potatoes!
It can be used as a rub, or as a marinade by blending it with olive oil and water. If you have meat that needs a little tenderizing, you can also add vinegar to the marinade. It blends so well with the Peppercorn seasoning and infuses the meat with peppercorn flavor in addition to tenderizing it. Allow the meat to marinade for several hours. Peppercorn Perfection Grilled Steaks
Ingredients
Peppercorn Perfection Chicken Thighs
- 3 tbsp. Treks & Bites Peppercorn Perfection spice blend
- 4 New York steaks or tenderloin filets
Peppercorn Perfection Marinade
- 2 tbsp. Treks & Bites Peppercorn Perfection spice blend
- 1/4 cup olive oil
- 1/4 cup water
Peppercorn Perfection Dipping Sauce
- 2 tbsp. Treks & Bites Peppercorn Perfection spice blend
- 1/4 cup olive oil
Instructions
- Rub steaks top and bottom with olive oil and then pat Peppercorn Perfection spice blend to cover top and bottom of steak about one hour before grilling. Or marinade for several hours before grilling.
- Preheat grill to medium heat. When ready to cook steak, grill about 2 minutes per side, or until seared on the edges, but the color you like on the inside. (Rare, medium or well-done, will depend upon the temperature of your grill and your desired doneness.) This will take anywhere from 2-5 minutes per side, depending upon the heat of the grill and the thickness of the steak.
- If you wish to have a dipping sauce, simply blend 1-2 tablespoons of the Peppercorn Perfection with olive oil and drizzle over the top of the grilled steak.
My mother’s favorite cornbread dressing recipe was perked up this Thanksgiving by using your Peppercorn Perfection. It was also added to Clay’s great gravy which was so much tastier than any gravy I have ever made❣️
