Salad:
1large head of Romaine lettucechopped
1/4head radicchiochopped
1 or 2yellow, orange or red bell pepper, diced
1 15-ouncecan garbanzo beansdrained
1 1/2cupsdiced salami
1cupParano or white cheddar cheesecut into 1/2-inch cubes
1cupParmesan cheesecut into ½-inch cubes
1large English cucumbers peeled and diced
2stalks celerydiced
1cupKalamata oliveshalved
6marinated artichoke heartscoarsely chopped
1/2cuppepperoncinicoarsely chopped
Dressing:
1/2cupolive oil
1/4cupred wine vinegar
1teaspoonDijon mustard
2tablespoonsfresh basil leavesfinely sliced
1teaspoonItalian seasoning
S&P to taste
Instructions
Salad:
In a large glass salad bowl, layer lettuce, garbanzo beans, cucumber, salami and cheeses. Toss with dressing and serve with bread or crackers.
Dressing:
Mix all ingredients in a container with a tight-fitting lid. Shake well and toss over salad.
