Italian Chopped Salad

A deli of a salad: salami, garbanzo beans, Parmesan cheese, celery, cucumber, Kalamata olives, pepperoncini, artichoke hearts, Romaine lettuce, red bell peppers all tossed in a light Italian vinaigrette.

Ingredients

Salad:

  • 1 large head of Romaine lettuce chopped
  • 1/4 head radicchio chopped
  • 1 or 2 yellow, orange or red bell pepper, diced
  • 1 15- ounce can garbanzo beans drained
  • 1 1/2 cups diced salami
  • 1 cup Parano or white cheddar cheese cut into 1/2-inch cubes
  • 1 cup Parmesan cheese cut into ½-inch cubes
  • 1 large English cucumbers peeled and diced
  • 2 stalks celery diced
  • 1 cup Kalamata olives halved
  • 6 marinated artichoke hearts coarsely chopped
  • 1/2 cup pepperoncini coarsely chopped

Dressing:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh basil leaves finely sliced
  • 1 teaspoon Italian seasoning
  • S&P to taste

Instructions

Salad:

  • In a large glass salad bowl, layer lettuce, garbanzo beans, cucumber, salami and cheeses. Toss with dressing and serve with bread or crackers.

Dressing:

  • Mix all ingredients in a container with a tight-fitting lid. Shake well and toss over salad.
