Olive & Blue Cheese Crostini

Spanish olives, cream cheese, blue cheese puréed and baked on baguette slices.

Ingredients

  • 1 1/4 cup Spanish olives, pitted, reserve 1/4 cup for garnish Can be with or without pimientos
  • 3 oz. crumbled blue cheese
  • 4 oz. cream cheese, softened to room temp
  • 1 baguette, sliced into 1/4-inch slices

Instructions

  • Preheat oven to 400° F. Spray the baking sheet with cooking spray.
  • Place baguette slices on the prepared baking sheet.
  • Place olives, cream cheese and blue cheese in the bowl of your food processor and puree until smooth.
  • Spread the olive-cheese mixture on top of each baguette slice.
  • Bake for 5 minutes or so, just until cheese is bubbly and beginning to brown. Keep your eye on them, so you don’t over bake them!
  • Garnish each crostini with one half olive and dust with paprika. *Paprika is totally optional!
