Fig & Pomegranate Frozen Yogurt

Fresh figs, brown sugar, nonfat yogurt and fresh pomegranate juice create a deliciously light and tasty seasonal dessert.

Equipment

  • Your favorite Ice cream maker

Ingredients

  • 2 cups nonfat plain yogurt
  • 1/4 cup light brown sugar
  • 1 cup chopped figs with skins, but stem removed
  • 2 tbsp. light agave syrup or honey
  • 1 tbsp. vanilla extract
  • 2 tbsp. pomegranate juice, fresh or bottled
  • 2 tbsp. fresh pomegranate seeds for garnish

Instructions

  • Mix figs with brown sugar and allow to macerate and get juicy for about 15 minutes.
  • Purée macerated figs in a food processor until almost smooth. Some chunks are okay.
  • Mix puréed figs with all of the other ingredients and stir well. Place mixture into the bowl of your ice cream maker.
  • Freeze and churn according the your directions until thick, but not too icy. You want frozen yogurt to be a little bit more like soft serve that frozen solid. This took about 10 minutes in our Whynter ice cream maker.
  • If you don’t finish the frozen yogurt right away, you can freeze it and it will become very solid, but just remove it from the freezer about 5 minutes before serving to allow it to soften up a bit!

Notes

You can make frozen yogurt in your ice cream machine with any kind of fruit, nuts, cookie crumbles, or caramel or chocolate sauce or even candies. Here is a recipe for our homemade silky chocolate sauce and our Oreo Cooking Frozen Yogurt.

This ice cream maker, makes making ice cream a dream!
