BBQ Chicken English Muffins

Ingredients

  • 4 whole English Muffins fork split in half
  • 3 cup cooked chicken cut into bite-sized pieces or shredded
  • 1 1/2 cups barbecue sauce
  • 2 cup grated sharp cheddar cheese or your favorite cheese
  • For an optional twist mix small pieces of pineapple with the chicken and barbecue sauce.

Instructions

  • Preheat broiler to high. Lightly toast English muffins on a baking sheet.
  • Mix chicken with barbecue sauce. Spread chicken mixture over the toasted muffin. Sprinkle cheese over the top.
  • Broil for a few minutes, or until cheese is bubbly and beginning to brown. Serve hot!
