Grilled Salmon with Pecan-Bran-Maple Crust

Ingredients

Salmon Fillet

  • 4 6-8 oz. salmon fillets, with skin on one side

Pecan-Maple-Bran Crust

  • 1 cup toasted pecans
  • 1 cup Fiber One Cereal
  • 2 tbsp. pure maple syrup
  • 1 tbsp. light brown sugar
  • 1 tsp. salt
  • 1/2 tsp. chili powder or a dash of red pepper flakes

Instructions

Pecan-Maple-Bran Crust

  • Preheat your gas grill to medium heat.
  • Place Fiber One cereal and toasted pecans in the bowl of your food processor. Pulse to crush the mixture into large crumbs. Add brown sugar, salt, and chili powder. Add the maple syrup just before you plan to grill the fish and pulse until the mixture forms a crumbly paste. The cereal stays nice and crispy this way if you keep all the dry ingredients separate from the maple syrup until the last minute.
  • Place the fillets, skin side down on the piece of aluminum foil.
  • Cook the fillets on the prepared barbecue for about 3 minutes. Then tent the fish with foil. Continue to cook anywhere from 2-3 minutes, depending upon the thickness of your salmon fillets. Lift the foil and evenly distribute the pecan-maple-bran topping and spread evenly over the top of each fillet. Continue to cook for another two minutes, with the foil loosely tented over the top.
  • Remove from grill and serve with lemon!
