Figs Roasted with Feta, Thyme & Balsamic Glaze

Figs stuffed with feta cheese, baked until bubbly and drizzled with rosemary infused olive oil and balsamic glaze.

Ingredients

  • 12 whole figs
  • 3 oz. feta cheese (blue cheese or gorgonzola work well too)
  • 2 tbsp. olive oil
  • 1 tsp. fresh thyme leaves
  • 1 tbsp. balsamic glaze
  • 1/2 tsp. sea salt

Instructions

  • Preheat oven to broil.
  • Clean figs and place flat side down on a cutting board. Make a cross with a knife in the top (pointy) end of the fig and using your fingers, pull the four parts gently apart.
  • Place the prepared figs in a baking dish, cut side up. Stuff the opening in each fig with a few crumbles or feta cheese.
  • Drizzle olive oil and balsamic glaze over the top, sprinkle thyme leaves over each fig and season with salt.
  • Broil until cheese just begins to brown and figs are heated through.
  • Serve hot or at room temperature.
